I have about 10 or so, “Go-To” recipes when either my dinner idea bank has run dry (often), or when I’m too lazy to do anything else or try something new. Last night was one of those nights.

I’m also very fortunate to have built up a list of things that I know for a fact that my husband loves and most of the time, I love them too. This recipe is pure serendipity for me because 1) the hubby and I both love it, 2) it’s easy, 3) I usually have the ingredients in my pantry and 4) it’s healthy! Shhhh, the husband doesn’t really know about that last one.

It’s delicious any way you prepare it – slow cooker or not, jar salsa or fresh, etc. The leftovers are even great. I love it tossed with fresh pasta the next day. Mmmmmm!

Slow-Cooker Salsa Chicken

4 boneless, skinless chicken breasts
1 cup salsa
1 package reduced sodium taco seasoning
1 can reduced fat cream of mushroom soup (condensed)
1/2 cup reduced fat sour cream

Add chicken to slow cooker. Sprinkle taco seasoning over chicken. Pour salsa and soup over chicken. Cook on low for 6 to 8 hours. Remove from heat and stir in sour cream. Serve with rice.

Nutritional stats:
Serves 6. 158 calories. 3 grams of fat. 6.7 carbs. 24.3 grams protein – per serving. **3 Weight watchers points.

Now, here is the part where I do my “thing” and revise it. I don’t usually cook this in a slow cooker because, with a commute, my days are closer to 10 or more hours. So… here is my adaptation. Note, I cook it to serve just the two of us and still have enough for a third meal

Salsa Chicken

2 boneless, skinless chicken breasts
3/4 cup salsa
1/2 package of taco seasoning
1 can reduced fat cream of chicken soup
1/2 cup reduced fat sour cream

In a medium saucepan, combine salsa, taco seasoning, soup and sour cream and slowly bring to a simmer. Meanwhile, cut chicken into strips and saute or grill chicken on a George Foreman grill. Add cooked chicken to sauce and simmer for a while. Serve with white or brown rice and sauteed veggies.

I’m not a mushroom fan so I prefer the cream of chicken soup. And, I don’t really see the point in reduced sodium taco seasoning, unless you are trying to reduce your salt intake. If so, way to go, but I’m not that strong. This lady needs at least one vice!

It’s my personal belief that this is closer to 4 Weight Watchers points… just because it tastes so darn good, it can’t be that easy!
